Chinese Sweet & Sour Sauce

1 cup malt vinegar
1 cup sugar
1 1/2 tablespoon salt
1/2 cup orange juice
1/2 cup pineapple juice
1/2 cup tomato paste
1 tablespoon corn starch mixed with 2-3 tablespoons water

Mix the cornstarch with water and set liquid aside. Throw everything
else in a saucepan and heat. When mixture is hot, add cornstarch
mixture slowly, while stirring, until the right consistency is
reached.

Sweet & Sour Sauce

3/4 cup sugar
2 T rice vinegar
3 T ketchup
2 T cornstarch
3/4 cup water

Mix ingredients from the bottom up right in the saucepan and bring
to a slow boil.

Too sweet - decrease sugar, want more sour - increase vinegar.

C H I N E S E  R E D  S W E E T  A N D  S O U R  S A U C E
Makes about 1-1/2 cups sauce
It's the best sweet and sour sauce this side of China Town!

1/2 cup catsup

1/2 cup apple cider vinegar

1 tablespoon red wine vinegar

1/4 cup orange juice

1/4 cup + 2 tablespoons sugar (6 tablespoons)

1/4 teaspoon dry mustard

3/4 teaspoon Texas Pete Hot Sauce

1-1/2 tablespoons cornstarch

2 tablespoons water

Combine cornstarch and water and mix well.

In saucepan heat catsup, vinegars, orange juice, sugar, mustard, and hot sauce until sugar is dissolved. Slowly add cornstarch mixture, stirring constantly until mixture thickens, about 1 minute. Remove from heat. If sauce is a little too thick, add 2 more tablespoons water and stir well. Serve hot over rice with Sweet and Sour Chicken.

Sweet And Sour Sauce-BettyGa1

1 (20 oz.) can crushed pineapple
1 c. sugar
1/2 c. chopped green pepper
1/4 c. chopped pimento
1/2 clove garlic, mashed
1 c. cider vinegar
1/2 c. water
4 T. soy sauce
20 drops Tabasco sauce
4 T. cornstarch
1/2 c. cold water


Use 1-quart glass or enamel saucepan. Combine pineapple, sugar, green pepper, pimento, garlic, vinegar, 1/4 cup water, soy sauce and Tabasco sauce. Mix and heat slowly 5 minutes. Remove garlic. Stir cornstarch into remaining water until smooth. Stir into hot mixture. Cook, stirring constantly, until thickened and clear, about 5 minutes' boiling. Serve with deep-fat fried shrimp. In Chinese restaurants a spicy, hot mustard sauce, or a bland fruit sauce, such as stewed, sieved plums, is served with the sweet-and-sour sauces. Fried shrimp held by the tail are dipped first into one and then the other and eaten with the fingers.

Sweet and Sour Sauce-Lindah
1/2 cup of red wine vinegar
1/2 cup of ketchup
1/3 cup of sugar
15 drops of red pepper sauce


mix, makes 1 1/4 cups

SIMPLE SWEET  AND  SOUR  SAUCE

1 (2 1/2 lb.) can purple plums
1 (2 1/2 lb.) can apricots
1 (2 1/2 lb.) can applesauce
3/4 c. vinegar
1/4 tsp. garlic salt
1 tsp. MSG
Sweetener to taste

  Pit plums and blend all fruit.  Add remaining ingredients and
simmer over low heat for 20 minutes.

Sweet-Sour Sauce
 
½ cup cider vinegar
½ clove garlic
1 �?17 ounce can apricots
½ cup crushed pineapple
½ cup honey
½ cup lightly packed brown sugar
½ teaspoon salt
pepper to taste

Place garlic and vinegar in a jar. Cover tightly and refrigerate for 3 days.

Force apricots through a food mill into a saucepan. Stir in pineapple, honey, sugar, salt and pepper. Cook and stir over high heat until sugar is dissolved and mixture boils; reduce heat and cook slowly 10 minutes, stirring frequently to prevent sticking.

Remove from heat and stir in 2 tablespoons garlic-flavored vinegar. Cool; cover sauce and chill.

SWEET AND SOUR SAUCE
5 tablespoons dark brown sugar
4 tablespoons white vinegar
3 tablespoons cornstarch (mixed with a little water)
3 tablespoons soy sauce
3 tablespoons tomato paste
2 tablespoons sherry or red wine (optional)
2 tablespoons orange juice
8 tablespoons water.

Place sauce mixture in a saucepan . Heat, stirring, over moderate heat until sauce thickens. I use with deep fried pork or chicken. My grandkids love this over grilled sausages.. I often add a medium can of unweetened pineapple pieces (drained ) to the finished sauce. IF you do this use the pineapple juice in place of water in the recipe. This sauce is quite tangy!

SWEET & SOUR DIPPING SAUCE

1/4 cup peach preserves
1/4 cup apricot preserves
2 tbsp. light corn syrup
5 tsp. white vinegar
1 1/2 tsp. cornstarch
1/2 tsp. soy sauce
1/2 tsp. yellow mustard
1/4 tsp. salt
1/8 tsp. garlic powder
2 tbsp. water

Combine all ingredients except the water in a food
processor or a blender and puree until the mixture is smooth. Pour mixture into a small saucepan over
medium heat. Add water, stir and bring mixture to a
boil. Allow it to boil for five minutes, stirring often. When the sauce has thickened, remove it from the
heat and let it cool. Store sauce in a covered
container in the refrigerator. Makes: 3/4 cup

1 Cup Teriyaki Sauce

1 Tbsp. Chopped Garlic

½ Tbsp. Minced Ginger

¼ Cup Chopped Cilantro

2 Tbsp. Cornstarch

¼ Cup Cold Water

½ Cup Catsup

In a medium saucepan, combine sugar, vinegar, teriyaki sauce, garlic, ginger and cilantro; bring mixture to a boil over medium heat on stovetop. In a small bowl, combine cornstarch and water; stir until smooth. Add cornstarch to saucepan; stir. Bring to a boil. Cook for 1 minute, or until sauce thickens. Stir in catsup.
