C H I N E S E R E D S W E E T A N D S O U R S A U C E Makes about 1-1/2 cups sauce It's the best sweet and sour sauce this side of China Town! 1/2 cup catsup 1/2 cup apple cider vinegar 1 tablespoon red wine vinegar 1/4 cup orange juice 1/4 cup + 2 tablespoons sugar (6 tablespoons) 1/4 teaspoon dry mustard 3/4 teaspoon Texas Pete Hot Sauce 1-1/2 tablespoons cornstarch 2 tablespoons water Combine cornstarch and water and mix well. In saucepan heat catsup, vinegars, orange juice, sugar, mustard, and hot sauce until sugar is dissolved. Slowly add cornstarch mixture, stirring constantly until mixture thickens, about 1 minute. Remove from heat. If sauce is a little too thick, add 2 more tablespoons water and stir well. Serve hot over rice with Sweet and Sour Chicken. | |

Sweet And Sour Sauce-BettyGa1
1 (20 oz.) can crushed pineapple 1 c. sugar 1/2 c. chopped green pepper 1/4 c. chopped pimento 1/2 clove garlic, mashed 1 c. cider vinegar 1/2 c. water 4 T. soy sauce 20 drops Tabasco sauce 4 T. cornstarch 1/2 c. cold water Use 1-quart glass or enamel saucepan. Combine pineapple, sugar, green pepper, pimento, garlic, vinegar, 1/4 cup water, soy sauce and Tabasco sauce. Mix and heat slowly 5 minutes. Remove garlic. Stir cornstarch into remaining water until smooth. Stir into hot mixture. Cook, stirring constantly, until thickened and clear, about 5 minutes' boiling. Serve with deep-fat fried shrimp. In Chinese restaurants a spicy, hot mustard sauce, or a bland fruit sauce, such as stewed, sieved plums, is served with the sweet-and-sour sauces. Sweet and Sour Sauce-Lindah
1/2 cup of red wine vinegar 1/2 cup of ketchup 1/3 cup of sugar 15 drops of red pepper sauce mix, makes 1 1/4 cups

Sweet-Sour Sauce ½ cup cider vinegar ½ clove garlic 1 �?17 ounce can apricots ½ cup crushed pineapple ½ cup honey ½ cup lightly packed brown sugar ½ teaspoon salt pepper to taste Place garlic and vinegar in a jar. Cover tightly and refrigerate for 3 days. Force apricots through a food mill into a saucepan. Stir in pineapple, honey, sugar, salt and pepper. Cook and stir over high heat until sugar is dissolved and mixture boils; reduce heat and cook slowly 10 minutes, stirring frequently to prevent sticking. Remove from heat and stir in 2 tablespoons garlic-flavored vinegar. Cool; cover sauce and chill.

Cornstarch ¼ Cup Cold Water ½ Cup Catsup In a medium saucepan, combine sugar, vinegar, teriyaki sauce, garlic, ginger and cilantro; bring mixture to a boil over medium heat on stovetop. In a small bowl, combine cornstarch and water; stir until smooth. Add cornstarch to saucepan; stir. Bring to a boil. Cook for 1 minute, or until sauce thickens. Stir in catsup. | |
