Wienerschnitzel Chili Sauce
Makes 6 cups in about an hour

3/4 lb ground beef
1/4 lb ground pork
6 cups water
1/4 cup cornstarch
1/2 cup Wondra Flour
1 (6 ounce) can tomato paste
1/4 cup chili powder (McCormick)
3 tablespoons white vinegar
1 tablespoon salt
1 tablespoon dried onion flakes
1 1/2 teaspoons granulated sugar
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper

Brown ground beef and ground pork in a large saucepan over medium heat, making sure that the meat is well crumbled.
When the meat is completely browned cover saucepan and turn heat to low.
After ten minutes, remove the ground meat from the heat and drain off most of the fat.
Keep some of it in the pan.
While the meat is still off the heat, mix the water and the cornstarch.
Whisk the cornstarch thoroughly as it's added until it's dissolved into the water.
Do the same for the Wondra flour.
Add water mixture to the pan.
You can now set the pan over medium heat and add the remaining ingredients.
Bring mixture to a boil stirring often.
When chili begins to boil, reduce heat and simmer for 30 minutes.
When chili is done it will be much thicker and darker, like the real thing.
You can use this chili sauce on hot dogs, hamburgers, french fries or take it solo.
NOTE: Wondra flour is a finely-ground quick-mixing flour used in sauces and gravies.
It is made by Gold Medal and can usually be found in the baking aisle next to the other flour.

Rosa's Chili Sauce ~ Neesie


1 tablespoon oil
4 chilies seeds and membrane removed
1 clove garlic
1 teaspoon salt
2/3 cup water
1 tablespoon white vinegar
1/2 teaspoon dried oregano

In a skillet heat the oil and add the chilies and cook 40 seconds: stirring
constantly. Rinse. Transfer the chilies to a blender. Add the garlic, salt
and water and puree briefly. There should be pieces of roughly chopped
chilies. Transfer to a bowl. Stir in the vinegar and water. Serve.

Makes 1 1/2 cups.

Chili Paste

1 Lemon (and zest)
1 Lime (and zest)
1 orange (and zest)
1/2 green chili, or more to taste (chopped with or without seeds)
5 garlic cloves (finely crushed)
3 tablespoons mild chili powder
1 tablespoon olive oil
1 tablespoon paprika
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon ground cinnamon

Mix 1/2 teaspoon of each fruit zest and all the juices with other ingredients. Add more spices if desired. Let stand at least 30 minutes before using (should thicken).

Hot Chili Sauce

4 Cups Chopped, Peeled Tomatoes

½ Cup Chopped Green Pepper

½ Cup Chopped Onion

½ Cup Chopped Jalapeno Pepper

2 Cloves Garlic, minced

2/3 Cup White Vinegar

2 Tbsp. Sugar

1 tsp. Salt

½ tsp. Mustard Seeds

1/8 tsp. Ground Allspice

Combine all ingredients in a large saucepan; bring to a boil over medium heat. Reduce heat, and simmer, stirring occasionally, 10 minutes or until vegetables are tender, cool. Spoon into a serving dish, cover and chill. Serve with tortilla chips. Yield: 3 ½ Cups.

Sweet Chilli Sauce

Paprika, maple syrup, and Thai chillies are combined with Chinese seasonings
in this fusion recipe that makes a sweet alternative to more traditional
Asian chilli sauce.

INGREDIENTS:
5 Thai Chillies chopped very small
500 ml maple syrup
3 Tbsp cider vinegar
4 Tbsp sherry
4 Tbsp light soy sauce
2 tsp minced ginger
3 cloves garlic, crushed
1/4 tsp pepper
1/4 tsp paprika

PREPARATION:
Mix together chillies, maple syrup, vinegar, sherry, soy sauce, ginger,
garlic, pepper and paprika.
Simmer ingredients in a saucepan, stirring frequently over low heat until
thickened (about 30 minutes).

Water
1�? cup onions, chopped
3�? cup Wesson oil
1 tsp. salt
3 tsp. chili powder
1 TBS paprika
Hot sauce

Cook ground chuck in large sauce pan, adding enough water to make a medium-thick mixture. Cook on medium heat until it comes to a slow boil, cooking for 3-5 minutes, stirring until all lumps are gone. Remove from heat. Sauté onions in oil until clear. Return meat to medium heat, add onions, salt, chili powder and paprika. Stir and bring to a slow boil, cooking for 10 minutes. Add hot sauce to taste.

WEST VIRGINIA HOT DOG CHILI
 

INGREDIENTS:
1/2 cup shortening
2 TBSP. onions, chopped
2 cloves garlic, chopped
5 lbs. ground beef
1 1/2 TBSP. paprika
2 1/2 TBSP. chili powder
1 1/2 TBSP. black pepper
1 TBSP. cayenne pepper (can use 1/2 TBSP. - 2 TBSP.)
2 TBSP. salt
2 1/2 TBSP. ground cumin
1 tsp. ground cinnamon
1/2 - 1 cup cracker meal

DIRECTIONS:
Saute meat, garlic and onions till browned
Add spices, stir well
Add about a quart of water and cook over low heat for 3-4 hours
Add a little water occasionally to keep from sticking
When chili is cooked, remove from heat and add 1/2 to 1 cup of
cracker meal & stir well
Another trick that you can do is place the pot in the bottom of
the kitchen sink and run an electric hand mixer around briefly -
this makes for a finer ground meat texture & is closer to the
"real thing"
After the first batch you will learn to vary (slightly) the
blend of peppers and cumin...the cinnamon is critical but your
chili should never have a cinnamon taste.

This chili freezes well and you may cut the recipe in half, but
NO more!

Hot Dog Chili Sauce

1 pound hamburger
1 1/2 cups water
1 can tomato paste
1 onion, chopped fine
3/4 tablespoon chili powder
1 1/2 tablespoons salt

Cook hamburger; drain. Mix hamburger with all ingredients and simmer for 45 minutes. Hamburger should be very fine. Spoon over hot dogs in buns and top with grated cheese.
