Title: PASTA PEANUT STIR-FRY
Categories: Pasta, Quick
      Yield: 4 Servings

      1 lb Linguine or Spaghetti
           -OR Thin Spaghetti
           - uncooked
      1 ts Vegetable oil
      4 md Carrots; cut julienne
    1/2 ts Hot red pepper flakes
      1 bn Scallions
           - sliced diagonally
           - into 1/2-inch lengths
      1 lg Cucumber
           - peeled, cut julienne

---------------------------SAUCE--------------------------------
      3 tb Smooth peanut butter
    1/3 c  Lime juice
    1/4 c  Low-sodium soy sauce
    1/4 c  Low-sodium chicken broth
           - (defatted)
           Black pepper to taste

  Prepare pasta according to package directions; drain and transfer to a
  serving bowl. Warm 1 teaspoon vegetable oil in a large non-stick wok
  or skillet over high heat. Add the carrots and stir-fry for 2 to 3
  minutes until tender. Add the red pepper flakes, cucumbers and
  scallions to the wok or skillet. Stir-fry for 2 minutes.
 
  Add all the sauce ingredients to the wok or skillet. Season with
  pepper. Bring to a boil. Pour the vegetables over pasta. Toss well
  and serve immediately.

Pasta Peanut Stir Fry

1 pound linguine, spaghetti or thin spaghetti, uncooked
1 teaspoon vegetable oil
4 carrots, medium, cut julienne
1/2 teaspoon hot red pepper flakes
1 bunch scallions, sliced diagonally into 1/2 inch lengths
1 large cucumber, peeled, cut julienne

Sauce:
3 tablespoons smooth peanut butter
1/3 cup lime juice
1/4 cup low sodium soy sauce
1/4 cup low sodium chicken broth
freshly ground black pepper to taste

Prepare pasta; drain and transfer to serving bowl. Warm 1 teaspoon vegetable oil in a large nonstick wok or skillet over high heat. Add the carrots and stir fry for 2 to 3 minutes until tender. Add the red pepper flakes, cucumbers and scallions to the wok or skillet. stir fry for 2 minutes. Add all the sauce ingredients to the wok or skillet. Season with pepper. Bring to a boil. Pour the vegetables over pasta. Toss well and serve immediately. Serves 4.

Stir Fry Linguine

1 onion, coarsely chopped
1 clove garlic, minced
1 tablespoon olive oil
1 pound sirloin steak, cut in very thin strips
1 green pepper, julienned
12 mushrooms, quartered
14 ounces spaghetti sauce, canned or homemade
1 cup grated mozzarella cheese
1 pound hot cooked linguine, drained

Stir fry onion and garlic in oil. Add beef. Continue to stir fry until beef is no longer pink. Add vegetables, stir fry for 1 minute. Pour in sauce and heat through. Toss sauce with pasta and 3/4 cup mozzarella. Sprinkle remaining cheese on top. Makes 4 servings.

STIR FRY WITH PASTA

3 cups mostaccioli 
1/2 cup ricotta or cottage cheese 
1/2 cup grated mozzarella
dash salt and pepper
2 cups cooked ham, cut in Julienne strips
3 cups fresh mushrooms. sliced
1&1/2 cups broccoli flowerets 
1/2 cup chopped onion
2 tbsps. butter
8 cherry tomatoes. quartered
grated parmesan cheese to taste

Cook mostaccioli per directions. Cover to keep warm. Combine next 3 ingredients. Set aside. Stir fry ham, mushrooms, broccoli and onion in large skillet with butter. Stir fry till tender. Stir in cherry tomatoes, just to heat. Toss pasta with cheese. Arrange on platter. Spoon stir fry over center. Serve with parmesan cheese.

RAMEN STIR FRY

A very quick and inexpensive dinner. You can make this dish to your liking. Sometimes I add red pepper flakes for a spicier stir fry. This can be made on the stove top, electric skillet o microwave.
2-3 T. oil
soy sauce
garlic (optional)
1 or 2 bags frozen stir fry vegetables
1 lb chicken beef or turkey breast
3 pkg ramen noodles flavored w/ whichever meat you are choosing; cooked

Saute' meat in oil, garlic and soy sauce. Add the vegetables and cook till warmed through. Add the cooked ramen noodles and saute' till hot adding soy sauce and any seasonings to taste. You can add any vegetable combinations and season it up any way you like as well.

Prep Time: 10 Min
Cook Time: 20 Min
Total Time: 30 Min
Servings: 6
