Mexicana Lamb Shanks Recipe 4 Servings Ingredients - 4 lamb shanks
- 2 tablespoons oil
- 1 clove minced garlic
- ½ cup chopped onion
- 1½ cups water
- ½ cup diced celery
- 1 15 oz. can diced tomatoes
- 1 (1.25 oz.) package taco seasoning
- 1 14 oz. can kidney beans, drained
- 1 14 oz. can pinto beans, drained
- 1 tablespoon fresh parsley
- 1 tablespoon fresh cilantro
Preparation Heat oil to medium high, brown lamb shanks, garlic and onion. Add water, celery, tomatoes (with juice) and taco seasoning, stir until blended. Cover and simmer for 1 hour or until lamb shanks are tender. Add drained beans, parsley and cilantro. Simmer an additional 15 minutes or until thoroughly heated. |
