Chicken Cheese Rolls
6 boneless chicken breast halves
8 oz. whipped cream cheese w/ chives, divided
1 Tbs. butter, divided
6 slices bacon
Pound chicken breasts between waxed paper till 1/2 inch thick.
Spread each with about 3 Tbs. cheese. Dot each with 1/2 tsp. butter. Fold ends over filling, and wrap 1 slice of bacon around each roll.
Place seam side down in a shallow baking pan. Bake on TOP rack in 400 degree oven for 40 min. or till juices run clear when pierced.
Broil about 5 min. till bacon is crisp.
*Sometimes I use fat free cream cheese. It works fine.
(Some cheese may leak out, just serve it over the top.)
