Mrs. Siggs Snickerdoodles
1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 tsp. vanilla extract
2 3/4 cups flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
2 Tbs. white sugar
2 tsp. ground cinnamon
Preheat oven to 400.
Cream together butter, shortening, 1 1/2 cups sugar, eggs and vanilla. Blend in flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls. (I used a melon baller....boy how easy was that!)
Mix the 2 Tbs. sugar and cinnamon. Roll dough ball in mixture. (I used a zip-loc bag and a lot more sugar/cinnamon lol.) Place 2 inches apart on ungreased baking sheets.
Bake 8-10 minutes, or until set but not too hard. They should be soft in the middle and crispy around the edges. Remove immediately to racks.
**I also added about a tsp of cinnamon to the dough.
