Smothered Pork Chops

4 large center cut pork chops
2 tablespoons oil
Chopped onions (as much as you desire) (chopped coarsely)
Season all to taste
Cayenne pepper (optional)
Chopped garlic (to taste) - I use about 5-6 cloves
Red or green bellpeppers or both (optional)
 
Wash, drain and season pork chops well. Heat oil in magnalite skillet or one simular. Brown chops on one side then turn and add about 1 or 2 tablespoons water. Let brown on the other side. Remove chops and set aside. Add a little water to loosen pan drippings. Add chopped onions and let the brown. When onions are wilted and nicely browned return chops to pot and add enough enough water to simmer and make a wonderful gravy.. Add finely chopped garlic. Cover and simmer about 30 minutes or longer. Check for tenderness. Add a little more water if needed. Serve over hot rice or mashed potatoes. My family loves to eat creamed corn with them.
 
Serves 4

You may add a few drops of kitchen bouquet before simmering if you desire an even darker gravy.
