Cranberry Pearl Onions

Taste of Home



This unusual combination of pearl onions and cranberries is surprisingly

delicious. There's plenty of thick, dark red sauce, and the onions have

a sweet-tangy taste. They'll melt in your mouth! -Lesley Tragesser,

Ingredients:

8 cups water

3 packages (10 ounces each) fresh pearl onions

1 tablespoon butter

1 tablespoon vegetable oil

1-1/2 cups cranberry juice

1/2 teaspoon salt

1 can (16 ounces) jellied cranberry sauce

1/2 teaspoon lemon juice



Directions:

In a large saucepan, bring water to a boil. Add onions; boil for 3

minutes. Drain and rinse in cold water; peel.

In a large skillet, cook onions in butter and oil over medium heat

until lightly browned, about 5 minutes. add cranberry juice and salt.

Bring to a boil. Reduce heat to medium-low; cover and cook just until

onions are tender. Add cranberry sauce and lemon juice; cook and stir

until mixture is thick and syrupy. Yield: 6 servings.

Glazed Onions

- 2 lb. small onions
- 1/2 cup melted butter
- 6 tbs sugar
- Paprika

Cook the onions in a large amount of boiling,salted water for about 40 minutes
or till tender, then drain. Heat the butter in a
skillet. Add the onions & sprinkle with sugar. Cook over low heat for 10 minutes
or till onions are glazed, stirring frequently.
Sprinkle with paprika.

FRIED GREEN ONIONS



3 or 4 slices bacon

2 cups green onions including tops, chopped into small pieces (about 1/2")

1/2 teaspoon salt

1/8 teaspoon black pepper

1 teaspoon sugar



Fry the bacon in a heavy skillet until crisp, drain on paper towels and crumble into small pieces. Remove all but about 1 tablespoon of the bacon grease from the pan and add the chopped green onions, salt, black pepper, sugar and the crumbled bacon. Stir in 1/2 cup of hot water and simmer for 20 to 25 minutes. Serve hot.

Glazed Stuffed Onions



8 medium onions, peeled (or use 4 very large onions)

Boiling salted water

2 tbsp butter or margarine

2 cups cooked ham, finely chopped or ground

Dash of pepper

2 cups soft bread crumbs

1/2 cup maple syrup

2 tbsp butter or margarine



Cook onions in boiling salted water 10-15 minutes or until outside

layers are just tender. Scoop out centers leaving a 1/4" shell. Chop

the centers. Sauté the chopped onion in 2 tbsp butter in skillet until

tender. Stir in ham, bread crumbs and pepper. Spoon into onion shells.

Place in a shallow baking dish. Simmer syrup and 2 tbsp butter in

skillet for 2 minutes. Pour over onions. Bake at 350 degrees for 30

minutes, basting several times during baking.



Four servings or four cups stuffing mixture.

Festive Onions
 
4 cups sliced onions
5 tablespoons butter
1 cup cream
salt to taste
ground black pepper to taste
2/3 cup Parmesan cheese
2 eggs


      
      1 Saute onions in butter or margarine until transparent.
         Place in 2-quart baking dish.

      2 In a small bowl, beat eggs well. Stir in cream, and
         season with salt and pepper. Pour mixture over onions, and
         sprinkle cheese.

      3 Bake, uncovered, at 425 degrees F (220 degrees C) for
         15 to 20 minutes.

Vidalia Onion Pie



3 to 4 medium Vidalia onions

3 to 4 tablespoons butter

salt

freshly ground black pepper

chilled unbaked pie shell for 2-crust pie

1/4 to 1/2 cup chopped ham

1/4 to 1/2 cup shredded cheese (your favorite)

3 egg yolks plus 1 whole egg

1/2 cup heavy cream

dash of nutmeg



Halve the onions and slice thinly. Sauté in butter

until tender. Add ham, then salt and pepper to taste;

spread in chilled pie crust. Sprinkle the onion

mixture with shredded cheese. Whisk together the egg

yolk, whole egg, and cream then pour over the onion

mixture. Sprinkle with nutmeg then roll out the

remaining chilled pastry and fit it over the filling

as a top crust. Cut a 1/2-inch hole in the center of

the pastry. Bake the pie at 450° for 10 minutes, then

reduce the heat to 350° and continue baking until the

custard is set and the crust is browned, about 30

minutes. Serve warm or cool

3 cups flour
1 and 1/2 teaspoons salt
1 tablespoon sugar
1 and 1/2 cups butter

1 egg, beaten
1 tablespoon vinegar

Combine sifted flour, sugar and salt in a bowl. Cut the butter into the mix with a pastry blender until the consistency is fairly coarse, with lumps the size of peas. Stir and work in the egg, water and vinegar and roll the dough out on a floured board. Line the pie pan with dough, flute the edges and pour in the filling and then bake. This pie calls for only a bottom crust, so you can save the extra dough in the freezer or make two pies.

To prepare the filling for one pie use the following ingredients:

Filling:
1/4 cup bleu cheese, crumbled
1 tablespoon butter
6 large onions, peeled and thinly sliced
salt and pepper to taste
1 tablespoon flour
1 cup heavy cream
4 whole eggs

Preheat the oven to 400F. Heat the butter in a large frying pan and saute the onions until soft, about 10 to 15 minutes over a low heat. Salt and pepper the onions to your taste, then turn off the heat and sprinkle on the flour. Add the cream and stir well, blending all the ingredients. Add eggs, one at a time, while stirring and when thoroughly mixed, pour into the prepared pie crust. Sprinkle the crumbled bleu cheese on top and place into the oven and bake for 35 to 45 minutes, until the top is nicely browned, but not burnt. Let cool and serve with a salad and some crisp white wine.

Braised Onions with Blue Cheese
Prep: 10 min, Cook: 25 min.
  • 1 Tbs. olive oil
  • 2 large red onions, cut into 1/2 inch slices
  • 1 cup vegetable stock
  • 1/4 lb. blue cheese, crumbled
  • 1/4 cup dried breadcrumbs
  • 2 Tbs. port wine (optional)
  • 2 Tbs. unsalted butter

Heat oil in a heavy nonstick skillet over medium heat. Sauté onion slices in a single layer 2-3 minutes per side or until browned. Add stock and bring to a boil. Reduce heat to medium low. Cover skillet and simmer 10 minutes or until onions are tender. Transfer onion slices to a baking dish. Add wine to same skillet, stirring with a wooden spoon to deglaze. Simmer 2 minutes or until mixture is reduced to 1/2 cup. Remove from heat. Whisk in butter 1 Tbs. at a time. Turn on broiler. Season onion slices with salt and pepper to taste. Sprinkle with blue cheese and breadcrumbs. Place under broiler 1 minute or until breadcrumbs are golden brown. Serve sauce over onions.

EASY ONION PATTIES

3/4 cup flour

1 tablespoons sugar

1 tablespoons cornmeal

2 teaspoons baking powder

1to 2 teaspoons salt

3/4 cup milk

2 1/2 cup onion -- finely chopped

Shortening for deep-frying



Mix together dry ingredients, then add the milk. This should

make a fairly thick batter. Add onions, and mix well. Drop

batter by spoon into hot fat. When golden on one side (about

3-4 minutes), turn them and flatten into patties. Fry until

golden on the second side. Drain on paper towels.

French-Country Onion Tart

1 pre-made pie crust (Pillsbury is one brand)
5 slices of bacon
3 Tbl of butter
2 large sweet onions (Vidalia work great). Slice very thinly. Use a mandolin on level 1 if you have one.
4 eggs
3/4 cup of whipping cream
Salt and pepper to taste
1/4 tsp of grated nutmeg
A pinch or two of cayenne (optional)

Unroll your pastry crust and place it gently into a 10" fluted tart pan with removable bottom. Squish the edges of the crust gently up the sides. Prick bottom with a fork in several spots. Place in a 375 degree oven and bake for 9 minutes. It will be a light beige and dry.

While the pastry is baking, fry your bacon. When it's light brown and crisping remove the bacon and dice. If you get some "teeny bits" don't toss them. You can use those too.

ESCALLOPED ONIONS



6 lg. onions

4 tbsp. butter

4 tbsp. flour

1/2 tsp. salt

1/4 tsp. pepper

2 c. milk

1 tsp. Worcestershire sauce

6 slices processed Swiss cheese, cut in pieces

6 slices buttered, dry French bread, cut in lg. cubes



Cook onions in boiling water to cover for 10-12 minutes until tender but firm. At some time, melt butter in saucepan; remove. Blend flour, salt and pepper; slowly stir in milk and Worcestershire sauce. Cook until boils and thickens (1 minute boil). Stir in cheese; low heat until melted. Pour over onions and stir. Arrange bread cubes around edge. Bake at 350a degrees for 30 minutes. This is delicious with roasts and steaks.



NOTE:



Nice company side dish.

Baked Sweet Onions
 
3 large onions, cut into 1/4-inch slices
2 tablespoons honey
1/4 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika

Preheat oven to 350 degrees.
Place sliced onion in center of a large sheet of heavy-duty
aluminum foil; set aside. Combine honey and mustard; drizzle
over onion. Sprinkle onion with remaining ingredients.

Fold aluminum foil over onion, allowing space for heat circulation
and expansion. Place on baking sheet and bake at 350 degrees
for 45 minutes.
