Gingerbread Cake
Makes 12 servings.

Cook Time: 40 minutes
2 1/2 cups flour
2 teaspoons baking powder
2 teaspoons McCormick® Ground Ginger
1 teaspoon baking soda
1 teaspoon McCormick® Ground Cinnamon
1/2 cup butter, softened
1/2 cup packed brown sugar
1 cup molasses
1 egg
1 cup boiling water
Whipped cream (optional)
1. Preheat oven to 350°F. Stir flour, baking powder, ginger, baking soda and cinnamon in medium bowl.
2. Beat butter, sugar and molasses in large bowl. Mix in egg. Add flour mixture alternately with water, stirring just until blended. Pour into greased 9-inch square baking pan.
3. Bake 40 minutes. Cool in pan on wire rack. If desired, cool in pan 10 minutes, then invert onto wire rack to finish cooling. Serve with whipped cream, if desired.
