Bunny Cake
 
Transform an ordinary 9x13-inch cake into a bunny cake that both children and adults will find delightful.  Perfect for birthday parties, Easter, or to celebrate spring.  No fancy decorations or equipment are needed.  Just cut, frost with Neon-tinted frosting, and top with tinted coconut.
Prep Time: 45 minutes
 
 
  
 
1 9 x 13-inch cake, baked and cooled
McCormick® Assorted NEON! Food Colors & Egg Dye
1 to 2 tubs ready-to-spread white or vanilla frosting
1 package  (14 ounces)  flaked coconut
miscellaneous decorations as desired, such as M&Ms, gumdrops, marshmallows, licorice whips

1.  Cut cake in half horizontally, with bottom half slightly larger than top half. Round top corners of bottom half of cake to form body of bunny.     
2.  Cut top half of cake in half vertically.  Cut a 3- to 3 1/2-inch circle from one of these halves to form the head.  Cut the remaining half into half horizontally, forming two rectangles for the ears.  Round off one end of each of the rectangles to shape ears.
3.  Cut out small circle from scraps to form tail, or use a marshmallow.  Use M&M’s, gumdrops, licorice whips, or other small candies to form eye, nose, and mouth.
4.  Assemble cake as shown and frost with Neon-tinted frosting (stir about 7 drops of desired Neon color into canned frosting.)  Tint coconut* the same color as tinted frosting and gently pat onto frosted cake.  Sprinkle Neon Green-tinted coconut around bottom of bunny for grass effect.  (If desired coconut may be omitted.)
*To tint coconut:
Cake - put about 2 cups packaged coconut in resealable plastic bag.  Squeeze 5 or 6 drops of desired Neon color into bag �?use more or less until desired color is achieved.  Shake until color is evenly distributed.  Gently pat coconut onto frosted cake.
Grass - put about 1 cup packaged coconut in resealable plastic bag.  Squeeze 5 drops of Neon Green Food Color into bag and shake until color is evenly distributed.
