Chocolate Chip Cookie Cake

 

This easy-to-make cake is a taste delight with all the flavors of a chocolate chip cookie.  The glaze adds more vanilla flavor and keeps the cake moist.
Makes 16 servings
Prep Time: 15 minutes
Cook Time: 50 minutes
 
 
 
 

2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup milk
3/4 cup butter, melted, or vegetable oil
4 teaspoons McCormick® Pure Vanilla Extract
4 eggs
3/4 cup mini chocolate chips

Glaze:
1/3 cup confectioners' sugar
1/3 cup water
1 tablespoon butter
2 teaspoons McCormick® Pure Vanilla Extract


1.  Heat oven to 325°F.  Generously grease and flour 12-cup bundt or fluted tube pan.
2.  Combine cake ingredients, except chocolate chips, in a large bowl.  Beat on low speed 30 seconds; scrape sides of bowl.  Continue to beat 3 minutes at medium speed.  Fold in chocolate chips.  Pour into prepared pan.  Bake 40-50 minutes or until toothpick inserted in center comes out clean.  Remove cake from oven; pierce cake surface deeply with a fork, about every inch.

3.  Blend glaze ingredients in a small saucepan.  Bring to a boil; reduce heat and simmer 1 minute.  Spoon half of glaze over hot cake in pan.  Allow cake to stand 10 minutes; invert onto serving plate.  Spoon remaining glaze over cake.  Allow cake to cool before serving.
