3 3/4 C. Flour
2 1/2 Tsp. Baking Powder
1/2 C Granulated Sugar
1/2 Tsp. Baking Soda
1 Tsp. Salt
3/4 C Unsalted Butter
3/4 C. Currants, or those cranberry/raisin thingies work quite well
Grated Rind of one Orange
1 C Buttermilk
1/4 C Half & Half
Mix all dry ingredients EXCEPT the orange rind and currants together, then add the orange rind and currants. Gradually add buttermilk - Just until dough holds! Flour board, roll or gently pat dough into 1/2" thick rounds. Use 2" cutter - brush scones with half and half before baking in a 450 degree pre-heated oven for 10 minutes. Excellent when topped with whipped cream (double cream - yum!) and/or jam. Serve hot out of the oven if possible, but quite good cold. You can also sprinkle with powdered sugar or............
I sometimes cut the dough into wedges and/or roll into ovals and freeze or refridgerate to bake at a later time. This recipe works very well if you just want to cut one or more wedges off the edge of a cold oval and save the rest for another day.
