1 C Peanut Butter
1 1/2 boiling water
4-5 Tbs vinegar
1 1/4 t salt
2 med garlic cloves minced
2 T honey
1 T soy sauce
1/2 t crushed red pepper
4 T chinese seame oil
1 cucumber peeled, seeded and cut into thin strips
1 # vermicelli noodles cooked until just tender
4 scallions finely minced
3/4 C minced cashews or peanuts
1/4 C minced cliantro
Place peanut butter in med size bowl, boiling water and mix until blended.
Stir in vinegar, salt, garlic, honey, soy sauce, crushed red pepper, sesame oil.
Combine cooked noodles in large serving bowl, pour souce over top, add cucumbers, scallions, nuts.
Sprinkle cilantro and serve!
