We are experiencing temps that are "record breaking" here in Toronto!

Really nice for those that have Family travelling to "be with" for out Canadian Thanksgiving this weekend!

Hello to Everyone!

I am still alive......altho I am quite battered and bruised,(as is dh too)!

We have had a hell of a month!!!!!!!

$2,300 laid out for 2 moving companies,(included $100 for pizza's & refreshments x's 2), numerous items broken & many other momentoes(sp)....STOLEN!

I have had & NOT had internet service...(when I had it,...I had no time, when I didn't have it.....I had TIME!!!!)

We are moved....and are still living outta boxes.....have no idea where anything is......did (diligently),...mark ALL boxes as to floor and room they were to go to.......(even marked the rooms).....BUT the movers were iliterets(sp)....I guess.....!

Anyway....it will get sorted...just not as rapidly as we had hoped.

Needed 2 movers...first ones soaked us $1000 and left 3 rooms of furniture.....(after emptying 2 lockers)....tossed stuff, broke lotsa things....(cash paid,... no insurance!(StOOOOOOOOOOOOPID me)....then stole items out of dresser drawers.....(how can I prove that???????)

Second mover......(I have used before).....cost $1100 & got it all moved BUT took 12 hours to do so and dh was helping them and as he turned to exit the truck...he tripped over the end of the ramp and fell 5-6 feet to the pavement..hurting his  arm, shoulder and left hand,(he IS left-handed!)

When those movers left here that night.....we both sat & cried,.....questioning IF we had made the right decision?

Last Sunday....I was walking out to the car, (had to go to Rona to order a shed for the yard)......& I "fell OFF the sidewalk"! It was a "drop of maximum 1 inch!"....BUT I guess the different texture under my foot........, felt different and down I went......braced myself with my left hand...drove the lower fore-arm part "back into my elbow"....and in turn shoved the upper arm part back into the shoulder, sorta pushing it outta place!!!!!

We have worked EVERY day......in pain.....I am so black & blue, my clients look at dh and & as IF we are holding fighting, wrestling matches with each other!!!!!

Anyway......I am here......NOT saying I will be in EVERY day,(still have so much to get sorted.....I cannot fathom we had this all in a 2 bedroom apartment!)

Next move, (God willing).....I am buying a huge box of MATCHES!

NOT taking a thing........BURNING it ALL!

I have missed everyone soooooo much!

I want to hug each & everyone of you!

Guess "All would be right with the World" IF I added a recipe?

Hope the Canadians that are celebrating  our "Canuck Thanksgiving" have a good feast......and don't eat too much!

Mashed Squash
Metric Ingredient Imperial
1 medium acorn squash, halved & seeded 1
15 ml maple syrup 1 tbsp
2 ml pumpkin spice 1/2 tsp
15 ml butter 1 tbsp
- salt & pepper to taste -

Place squash halves, cut sides down, on baking sheet.

Bake in preheated 400 F (200 C) oven for 30 minutes or until tender.

Scoop squash pulp into mixing bowl.

Beat with electric mixer until almost smooth.

Stir in syrup, spice and butter.

Season to taste with salt and pepper.

Serves 4

Asparagus with Creamy Mustard Sauce
Metric Ingredient Imperial
125 ml yogurt 1/2 cup
30 ml mayonnaise 2 tbsp
15 ml dijon mustard 1 tbsp
10 ml lemon juice 2 tsp
2 ml salt 1/2 tsp
750 g asparagus spears, trimmed 1 1/2 lb
- pepper to taste -
In a small bowl; whisk yogurt, mayonnaise, mustard, lemon juice and salt.

Cook asparagus until tender crisp.

Drain well.

Serve with sauce drizzled on top.

Serves 6

Mashed Potatoes and Cauliflower
Metric Ingredient Imperial
1.2 L cauliflower, cut into small pieces 4 1/2 cup
625 ml potatoes, peeled & cut into small pieces 2 1/2 cup
75 ml sour cream 1/3 cup
15 ml chives 1 tbsp
- salt & pepper to taste -

In a large saucepan; add cauliflower and potatoes.

Cover with water and bring to boil.

Reduce heat and simmer for 10 to 12 minutes or until vegetables are tender.

Drain.

Add sour cream, chives, salt and pepper.

Using potato masher; mash until blended.

Serves 6

THANKSGIVING APPLE POUND CAKE......   

2 c. sugar
1 1/2 c. oil
3 eggs
3 c. plain flour
1 tsp. salt
1 tsp. soda
1 tsp. vanilla
1 c. raisins
1 c. chopped pecans
1 c. flaked coconut
3 c. diced apples

Mix together sugar, oil and eggs.

Then add dry ingredients.

Add vanilla, raisins, nuts, coconut and apples.

Pour into tube pan or bundt pan.

Bake 1 & 1/2 hours on 325 degrees.

ICING:
 
1 c. milk
1 stick margarine
1 c. brown sugar

Put in saucepan and bring to a boil.

Boil for 1 minute.

Pour over hot cake.

THANKSGIVING PUMPKIN CAKE....

1 (16 oz.) can pumpkin 
3 eggs
3/4 c. vegetable oil
1/2 c. water
2 3/4 c. flour
2 1/4 c. sugar
1 1/2 tsp. baking soda
1 1/4 tsp. salt
3/4 tsp. nutmeg
1/2 tsp. cloves
1 1/2 tsp. cinnamon
1/2 c. chopped nuts
1 c. raisins (optional)

Beat together eggs, pumpkin, vegetable oil and water.

Add dry ingredients.

Mix well.

Stir in chopped nuts.

Bake in greased and floured tube pan for 1 hour or until done at 350 degrees.
