10 lbs of yellow squash cut in chunks and boiled or steamed until tender. Drain well.
4 eggs beat up with 1 cup milk (may need more milk - just go with the consistancy)
1 large onion (cook in the squash)
3 cups Cheesy Ritz crackers ground up. (reserve one cup for the crust.)
2 tsp ground pepper 2 tsp red pepper flakes 3 tsp salt (more or less to taste)
3 cups of shredded sharp cheddar cheese (reserve one cup for crust)
Mix the 2 cups of crackers and 2 cups of cheese into the squash, salt, pepper and red pepper flakes. Mixture should be loosely thick. If too dry add more milk. Pour into a greased casserole dish...
Mix remaining one cup of cheese and the crackers together and sprinkle on top. Spray the entire casserole with a butter flavored baking pray - bake at 350 until crusty, brown and bubbly :) This makes a large casserole for a crowd, may want to half it!
