2 lbs parsnips
Boiling water
Salt
 
Sauce
2 tbsp butter
2 tbsp flour
1/2 tsp salt
1/8 tsp pepper
1.5 cups milk
 
2 tbsp butter
1/2 cup packaged dry bread crumbs
1/3 cup grated sharp Cheddar cheese
 
1.  Wash parsnips;  peel.  Cut lengthwise into quarters.  Remove core from parsnips: cut crosswise into 1.5 inch pieces.
 
2.  In 1-inch boiling, salted water in 3-quart saucepan, simmer parsnips, covered, 10 to 15 mins, or just until tender.  Drain.
 
3.  Meanwhile, preheat oven to 350F.  Grease a shallow baking dish (about 1.5 quarts). 
 
4.  Make sauce:  melt 2 tbsp butter in small saucepan.  Remove from heat; stir in flour,  1/2 tsp salt and the pepper to make a smooth mixture.  Gradually add milk, stirring.
 
5.  Over medium heat, bring to boiling, stirring constantly.  Reduce heat; simmer 1 min.
 
6.  Combine sauce with parsnips in prepared casserole dish.
 
7.  In tbsp butter in small skilled, brown bread crumbs, stirring.
 
8.  Remove from heat.  Add cheese, mixing well.  Sprinkle over parsnip mixture in casserole dish. 
 
9.  Bake, uncovered, 20 to 25 mins or until mixture is bubble and top is golden.
 
Makes 6-8 servings.

That looks  like my au gratin potatoe recipe...lol,  a basic white sauce, except I melt my cheese in the white sauce and  I do not pre brown my bread crumbs...lol  I also add onion.
