I make my cheese and onion pie from scratch all fresh ingredients lol
Firstly i peel and then cut the onion in half and then into slices and boil them till they are soft whilst they are cooking i make my pastry (shortcrust) its no use me putting ingredients down because i dont measure anything its roughly half the amount of Lard or marg to flour a pinch of salt, mix till its all mixed in then add water to make the dough ( for apple pies etc i add a small amount of sugar before i add the water)
Grease the plate before i add the pastry (after rolling it out lol)add the cheese which i have grated beforehand then put the onions on the top of the cheese put a lid of pasty on the top and hey presto its done i normally cook it on Gas no 5 takes about 25 mins to cook depending how brown you like it.

Forgot to mention i always use Mature cheddar cheese it makes it more tasty

It does sound yummy.  I will try it.  Not sure if I can manage making pastry though.

Sounds yummy,  I will try a touch of sugar in the crust as well. Do you put sugar in all your crusts?  or just for this pie?
