4 Cups shredded zucchini
3 cups flour
2 1/2  cups sugar
1 1/4 cups vegetable oil
4 eggs, (beaten)
4 tsp. vanilla
1/2 tbsp cinnamon
1 1/2 tsp salt
1 1/2 tsp baking soda
1/2 tsp baking powder
 
 So not shred zucchini with a food processor,  must be hand grated or it is too mushy.
 
  Add all ingredients together and divide into 2-3 lightly greased loaf pans.  bake at 325 for 55-60 minutes.
 
  I like to glace these with a simple powdered sugar glace,  but it is not necessary as they are very moist.

Oh Red ....  it does sound nice.  but is this not too much sugar.  Because I am not good at following recipes, I would be tempted to throw in a ripe banana for sweetness or and a cup of shredded carrots.
 
Just an idea.

That's a good idea Sweet,  if you experiment with it let me know.  ALso the oil,  I hate to put that much oil in it,  but never messed with it myself as it was so good. lol
