in one bowl combine

3 cups sugar

3 1/2 cups flour

1 tsp salt

2 tsp baking soda

1tbsp pumpkin pie spice

 

in second bowl combine

1 cup vegetable oil

2 cups orange juice

2 tsps vanilla extract

4 eggs

2 cups pumpkin

 

combine ingredients into one bowl.  Divide into muffin pans and bake at 350 for about 20 minutes.

 

  cream cheese icing goes great on these,  but again, not necessary as they are very moist.
