1 c. mashed pumpkin, I use canned
1 c, sugar
1/2 c shortening
1 tbsp orange zest
2 c. flour...all purpose, or whole wheat
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1/2 c raisins (optional)
mix first 4 ingredients, stir in sifted flour and other dry ingredients. Add raisins if opted. Drop onto an ungreased cookie sheet. These do not spread much, they tend to stay big and puffy . Bake in a 375 oven for 8-10 minutes Immediantly remove from pan and cool. Frost with some cream cheese icing and yum!!!
I tend to use pumpkin pie spice rather then just the cinnamon
