SOUTHERN "Elderberry Flower" CHAMPAGNE
4 Large heads elder berry flowers
3 1/2Cups sugar.
2 Tbsp vinegar
1 Gal water.
2 Lemons
Put the flowers , sugar, vinegar and water into a large bowl. Squeeze the juice from the lemons and cut the shells into quarters. Add lemon juice and segments; cover and let stand for 24 hours,
stirring or shaking occasionally with a wooden spoon. Strain into screw-topped bottles. Chill before serving. May be served with a dash of vodka or white rum.
