TOMATO SUPREMO
 
4 tomatoes- quite large
large handful fresh basil
2 crushed garlic cloves
extra virgin olive oil
1 loaf bread (ciabatta or fresh loaf- your choice)
cheese- mozerella (or your own choice)
salt
pepper
 
Chop the tomatoes and the basil and mix together these ingredients with the garlic. Season to taste with the salt and pepper and leave to marinade for one hour. Cut the bread into 8 thick slices, and brush one side of each slice with the olive oil. Grill this side of the bread until it is a pale golden colour- not too much.
Turn the bread over and on this side of each slice, coat first with some olive oil, and then pile the tomato mixture onto each slice. Grate and add the cheese on top and re-grill on this side until the cheese has melted. Serve whilst hot.
