The Health Nut
Serves 2
1 cup pineapple juice (juice half a pineapple, if making fresh)
10 almonds, whole or blanched
1 Tbsp. sunflower seeds
1 Tbsp. sesame seeds
1 Tbsp. flaxseed
1 c. chopped parsley
1/2 c. plain soy milk or milk of choice
1/2 tsp. pure vanilla extract
1 Tbsp. protein powder
6 ice cubes
Place the nuts, seeds, and pineapple juice in a bowl, cover, and soak overnight. Place this nut and seed mixture with the juice in the blender and add the parsley, soy milk, vanilla, protein pwder, and ice cubes. Blend on high speed until smooth. This drink will be a bit chewy beacuse of the nuts and seeds.
To kill molds, soak nuts and dried fruit for one hour to overnight in water and 1/2 tsp ascorbic acid.
