Cherry Bread
Ingredients:
4 cups all-purpose flour
16 ounces maraschino cherries, drained
2 teaspoons baking powder
1 teaspoon salt
1 1/2 cups butter, softened
4 large eggs
2 teaspoons vanilla extract
1 teaspoon almond extract
1 cup milk
2 cups granulated sugar
Chop the drained cherries and set aside. Sift
Sift together the powder and salt with the flour.
Sprinkle a tbsp. of the flour mixture over cherries
to coat. Cream the butter and sugar until light.
Add eggs one at a time, beating well after each.
Add the extracts and beat well. Stir in by hand the
flour alternating with the milk. When mixed fold in
the cherries. Grease and flour loaf pans. Bake at
350 degrees for about an hour. Test for doneness.
Makes 2 loaves. Notes: you can use dried cherries
that you have soaked beforehand if you wish. Also
this is good with a glaze.
