Sweet Potato Biscuits

1 cup all-purpose flour
1 cup whole-wheat flour
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons butter
1/2 cup buttermilk
2/3 cup mashed cooked sweet potatoes
Nonstick cooking spray

1. Preheat the oven to 425 degrees. In a bowl, combine the all-purpose
flour, whole-wheat flour, baking powder, baking soda, and salt. With a
pastry blender or fork, work in the butter until the mixture is coarse.

2. In another bowl, combine the buttermilk and mashed sweet potatoes. Add to
the flour mixture and mix until just moistened.

3. Transfer the dough to a lightly floured surface. Knead 2 or 3 times,
until smooth. Roll out the dough 1/2-inch thick. Using a 2-inch biscuit
cutter, dipped in flour, cut out 12 rounds.

4. Coat a baking sheet with the cooking spray. Arrange the rounds on the
baking sheet. Bake for 12 minutes, until golden brown.
