Banana Split Snack Cake 1 cup margarine or butter, softened 1 cup sugar 2 eggs 1/2 cup buttermilk* 1 cup (2 medium) bananas, mashed 1 tsp. vanilla 2 cups flour 1 cup quick cooking rolled oats 1-1/2 tsp. baking soda 1/2 tsp. salt 6 oz. pkg. semi-sweet chocolate chips 1/2 cup chopped nuts
Heat oven to 350. Grease 13x9 inch pan. In large bowl, cream margarine, sugar and eggs. Stir in buttermilk, bananas and vanilla, mixing well. Lightly spoon flour into measuring cup; level off. Stir in flour, oats, soda and salt; mix well. Stir in chips. Spread batter in prepared pan. Sprinkle nuts on top. Bake for 30 to 35 minutes. 12 servings.
Tip: *To substitute for buttermilk, use 1 Tbs. vinegar or lemon juice plus enough milk to make 1 cup.
