Rose Hip Cookies
Ingredients:
1/2 cup butter (not margarine)
1/2 cup sugar
1 egg, beaten
1/2 teaspoon rosewater
1 pinch nutmeg
1 teaspoon rose hips
1 1/3 cups flour
Confectioner's sugar
Instructions:
Cream butter and sugar; add beaten egg, salt, rosewater and nutmeg. Put rose hips in a blender and chop for one minute or until they are in 1/8" pieces. Blend flour and rose hips into the egg mixture and blend well. Drop batter by spoonfuls onto a cookie sheet. Bake at 375 degrees for 10-15 minutes till they're golden brown. Remove cookies from sheet and roll in confectioner’s sugar. Makes about 24 cookies.
