Dixie`s Gingerbread
 
This is a great cake for diabetics my husband loves it. I use a product called "The Sweet One" it is like Equal but doesn't get bitter in the baking process.
 
1 1/2 cups boiling water         
1 cup chopped dates            
4 tbsp margerin                    
2 teasp ginger                       
1 teasp cinnamon  
1/2 teasp cloves
2 cups flour
1 teasp baking soda
1 teasp baking powder
1 large egg [beaten]
8 to 10 pkts of "The Sweet One"
 
Preheat oven to 350. Lightly coat a 9-inch baking pan with cooking spray. Boil water add chopped dates let stand for 5 to 10 mins until cool.
In bowl, combine margarine, spices and cooled dates.
Add flour, baking powder, baking soda, sweetone and egg.
Mix until just blended. Pour batter into pan.
Bake for 25 to 30 minutes or until gingerbread pulls away and springs back when touched. Cool cake.
        
Can be served warm with a lemon sauce which is sugar free lemon pudding.  Walnuts or pecans can be add to the cake too.
Try it bet they'll like it my whole family does and most of them don't even know there is no sugar in it.
