Cherry Cola Salad
1 15-ounce can pitted dark sweet bing cherries 1 3-ounce package dark cherry gelatin 1 tablespoon fresh lemon juice 1 cup cherry cola 3/4 cup chopped pecans 1 3-ounce package cream cheese, at room temperature 1/2 cup sour cream 1/4 cup sugar 1/2 pint whipping cream 3 tablespoons powdered sugar
Drain cherries; reserve juice. Heat 3/4 cup of the reserved cherry juice over medium heat to boiling point; add to gelatin. Stir until all gelatin is dissolved. Add lemon juice and cola. Chill until gelatin begins to thicken. Add pecans and cherries. Mix cream cheese, sour cream, and sugar. Swirl into gelatin. Chill until firm. Whip cream until soft peaks form. Add powdered sugar. Spread on salad. Serves 6 to 8.
