Hot Pineapple Salad
- 1 large can chunk pineapple (reserve juice)
- 1 (8 oz.) pkg. cream cheese
- 1 dozen large marshmallows
- 1 cup grated Cheddar Cheese
- 1 egg
- 1/2 cup sugar
- 2 Tbsp. self-rising flour
Place Pineapple juice in top of double boiler. Beat in egg, sugar and flour. Cook until thickened.
Place pineapple in baking dish. Cut cream cheese in small pieces on top of pineapple.
Add marshmallows and pour cooked mixture over all. Top with grated cheese.
Cook 10 minutes in 450 F. oven or until bubbly.
Serve hot. This is great served with any type of pork or by itself as a dessert
