Mexican Taco Bake
1 pound lean ground beef
1 can tomato soup, condensed
1 cup salsa -- thick and chunky
1/2 cup skim milk
8 corn tortillas -- cut in 1" pieces
1 cup cheddar cheese, lowfat
In skillet over medium-high heat, cook beef until browned, stirring to separate meat. Pour off fat. Add soup, salsa, milk, tortillas and half the cheese. Spoon into 2 qt. shallow baking dish. Cover. Bake at 400 degrees for 30 minutes or until hot. Sprinkle with remaining cheese.
