SOUTHWEST LASAGNA
Ingredients: . 9 lasagna noodles, cooked according to package directions . 1 can (15 oz.) tomato sauce . 1 can (15 oz.) red kidney beans, drained . 1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies . 1 container (15 oz.) ricotta cheese . 1 egg . 1/4 cup chopped fresh cilantro . 2 cups (8 oz.) shredded Monterey Jack Cheese Directions: To make sauce, in a medium saucepan, combine tomato sauce, beans and RO*TEL: simmer 10 minutes. To make cheese filling, in a medium bowl combine ricotta cheese, egg and cilantro. Preheat oven to 325 degrees F. In a 13 x 9 x 2-inch baking pan, layer 1/3 cooked noodles, 1/2 cheese filling, 1/2 sauce, then 1/3 Monterey Jack Cheese. Repeat to make three layers ending with noodles, sauce, then cheese. Bake for 20 minutes; let sit for 5 minutes before serving. Makes 10 servings.
