Maple Meat Loaf
Ingredients
2 eggs, lightly beaten
1/2 cup milk
3/4 cup fine dry bread crumbs
1 pound ground ham
12 oz. ground pork
1/2 cup pure maple syrup
2 Tbsp. water
2 Tbsp. cider vinegar
1/2 tsp. dry mustard
1/4 tsp. ground cloves
Directions
1. In a large bowl, combine eggs and milk; stir in bread crumbs. Add
ground ham and ground pork; mix well. Lightly pat mixture into an oblong
10x5-inch loaf shape in a 2-quart rectangular baking dish.
2. For sauce: In a small bowl, combine maple syrup, water, vinegar, dry
mustard and cloves. Pour half of the sauce over the meat loaf; reserve
remaining sauce.
3. Bake, uncovered, in a 350 degree F oven for 1 hour or until internal
temperature registers 160 degree F on an instant-read thermometer,
basting frequently with remaining sauce. Remove meat loaf from oven. Let
stand for 10 minutes before cutting. Skim fat from sauce and serve with
meat loaf. Makes 6 to 8 servings.
