Buttermilk Coconut Pecan Pie
2 cups sugar 3 tablespoons self-rising flour 4 eggs, beaten 1 stick butter, melted 1 cup chopped pecans 1/2cup flaked coconut 1-1/2 teaspoons vanilla extract 1/2 cup buttermilk
Preheat oven to 325 degrees. Blend sugar, flour and beaten eggs until smooth. Add butter, pecans, optional coconut and vanilla extract. Mix well. Add buttermilk, and stir to combine. Pour into unbaked pie shell. Bake for 45 minutes. Let cool completely before cutting.
