Chicken Cordon Blue
6 skinless , boneless chicken breast
6 slices thinly sliced slices of smoked ham
6 slices swiss cheese thinly sliced
1 cup flour
3 TBS of warm water
3 eggs
1 to 1 1/2 cup bread crumbs
2 tsp. white pepper
1 c lemon juice
1 stick of butter or 4 tbsp magerine
Pound chicken breats's with a meat tenderizer about 2-3 times lay flat and place 1slice of ham and swiss on top of the breast and fold in half place in a glass pan do this until all the chicken breast's have ham and cheese in the middle of them . Place pan with chicken breast in refrigerator for thirty minuted to chill . Meanwhile in a small bowl mix together flour and white pepper mix well and set aside in a seperate small bowl take the eggs and 3 tbsp warm water and blend well with whire whisk set aside. In another seperate bowl place your breadcrumbs. In a large skillet place about a 1 to 3 tbsp of oil Preheat oven to 400 degrees . Take your chicken and in this order bread them roll each chicken breast in the flour mixture then in the egg mixture then in the bread crumbs. Place 1 or two breast's at a time in skillet over medium heat and lightly brown them on both sides and place the lightly browned chicken back in glass baking pan . Placing chicken in 400 degree oven and bake for 30 minutes . Place lemon juice and butter in small saucepan and heat until butter melts completely . Pour this sauce over the chicken and let bake ten more minutes. Serve with Rice and vegetable. of your choice
