Broccoli and Squash Casserole
2 lbs. of fresh broccoli florets(cut to bite size)
2 lbs. of fresh yellow crocked neck Squash, sliced
2 small onions chopped
4 TBsp. Butter
2 large eggs, lightly beaten
1 cup of Mayonnaise
4 cups (16 oz.) shredded chedder cheese
1/4 tsp. black pepper
3 cups fine, dry bread crumbs
Arrange broccoli in large steamer basket over boiling water. Cover and steam 5 to 8 minutes. Remove from basket. Add Squash and onion to basket steam for 5 to 8 minutes.
Combine: Squash, onion, and butter in large bowl and mash. Stir in broccoli, eggs, and next 3 ingredients: Spoon into 2 lightly greased 2 quart baking dishes. Sprinkle evenly with bread crumbs.
Bake at 350 degrees F, for 20 to 25 minutes or until golden brown.
Yeilds 8 to 12 servings
