FENNEL AND RED ONION SALAD
1 bulb fennel
I red onion
1 or 2 handfuls fresh tarragon (to your taste)
lemon juice
salad dressing of your own choice
Thinly slice the red onion into rings and trim and slice the fennel bulb. Place into a bowl and add the tarragon ... stir the ingredients together and add the lemon juice and season to taste. Leave to stand for at least thirty minutes, and then serve with the salad dressing of your own choice.
