Beltane Cookies
Ingredients
1 1/4 cups butter
1 1/3 cups sugar
1 Tbs. vanilla
1 egg, beaten
3 cups flour
1 Tbs. baking powder
1/2 tsp. salt
2 Tbs. orange zest
1/2 cup white chocolate chips
Method
1) Preheat oven to 350F (180C, Gas Mark 4)
2) Line a baking sheet with parchment paper.
3) Sift together flour, baking powder, salt and orange zest.
4) In a mixer, cream butter on medium speed, adding sugar gradually. Add vanilla and beaten egg, then flour mixture a little at a time, stopping frequently to push down from sides of bowl. When flour mixture is thoroughly combined, mix in chocolate chips.
5)Drop by teaspoonful onto baking sheet 1 inch apart. Flatten slightly with back of spoon.
6) Bake 10-12 minutes, or until beginning to brown. Allow to cool completely. Makes 3 dozen.
