Yule Fruit Salad

3 medium grapefruit
3 Mandarin Orange
2 cups grapes -- (500 mL) halved
1 cup pomegranate seeds -- (250 mL)
2 tbsp orange liqueur -- (25 mL)
1/2 tsp ground cardamom -- (2 mL)
1 Pinch salt

1. Cut a thick slice off the top and bottom of each grapefruit to expose the flesh. Stand the fruit upright on a cutting board and cutting from the top down to the bottom remove all the pith and skin. Use a small knife to cut along either side of each segment to the centre to free it from the membranes. Place the segments in a large bowl.

2. Peel the mandarins, carefully removing as much of the white pith as possible. Divide them into segments and add to the grapefruit. Add the grapes and pomegranate seeds.

3. Mix the orange liqueur with the ground cardamom and salt and then pour over the fruit. Stir to mix well and chill until ready to serve.

Makes 6 servings
