Violet Vinegar
Ingredients:
2 cups wild purple violets
2 cups white vinegar (or apple cider vinegar)
Directions:
Pack a pint jar tightly with the violet flowers. Pour the vinegar (unheated) over the violets. Cover tightly and allow to stand in a sunny window for 4 - 5 days. Strain out the violet flowers and keep the flavored vinegar in the refrigerator. Use in salads and dressings.
