Apple Muffins
Apple and cinnamon is a classic combination. These are fun and simple to
make and so yummy that all your friends will want one!
Makes 8 muffins

Shopping List
2 eggs
100g (4oz) butter or margarine
100g (4oz/½ cup) caster (superfine) sugar
100g (4oz/1 cup) self-raising flour
1tsp baking powder
50g (2oz) golden syrup
1 large cooking apple (about 300g/11oz)
Large pinch of ground cinnamon
You will also need: Muffin cases, muffin tin, small bowl, fork, large mixing
bowl, wooden spoon, sieve, vegetable peeler, sharp knife, chopping board,
dessert spoon, wire cooling rack
Assemble all the ingredients and equipment you need. Make sure you
understand what everything is, especially anything you haven't used before.
Wash your hands and put on a clean apron.
Preheat the oven to 200°C (400°F/Gas mark 6). Put the muffin cases into the
muffin tin and set aside. Crack the eggs into the small bowl and whisk well
with the fork
Mix the butter and the sugar together in the large mixing bowl until the
mixture is smooth and combined
Add half of the whisked eggs to the butter and sugar mixture and mix well.
Sift half of the flour into the mixture and mix well again. Add the baking
powder and the remaining egg and sifted flour and mix until everything is
combined. Add the golden syrup and mix in well.
Peel and chop the apple into quarters. Remove the core of the apple and
grate or chop finely. Add the cinnamon and chopped apples to you mixture and
mix well again.
Using a dessert spoon, fill each muffin case three-quarters full with your
apple cake mixture. Put them into the preheated oven for 20�?5 minutes.
Remove from the oven and allow to cool on a wire rack.
Handy hint: Use cooking apples, such as Bramleys, as eating apples can go
soggy during the cooking process
