RASPBERRY-LIME BREEZE

If you're looking for a super-simple refresher, this one fits the bill. It features a tangy, fresh raspberry topping that can be whipped up in minutes flat. The recipe makes 2 cups of sauce (plenty for 4 or more sundaes). If you happen to have some left over, try it on pancakes or waffles.

RECIPE INGREDIENTS:
2 1/2 cups fresh raspberries
1/3 cup orange juice
1/3 cup sugar
1 to 2 teaspoons lemon juice
Lime sherbet
Mint, for garnish (optional)

1. In a blender, puree the berries with the orange juice, sugar, and lemon juice, then strain the mixture into a bowl to remove the seeds.

2. For each serving, scoop sherbet into a chilled dish and spoon on some of the sauce. If you like, add a sprig of mint for garnish.
