2 tablespoons arugula, finely chopped or watercress
1 teaspoon lemon juice
1 clove garlic, finely chopped
1 tablespoon olive oil
1/2 tablespoon thyme, chopped finely
8 ounces cooked white beans
Combine all ingredients except arugula until smooth. Stir in arugula. Serving: 2 tbs
