Marigold Cheese Soup
Ingredients:
1/4 cup butter (not margarine)
1/2 cup minced celery
1/2 cup minced green pepper
3/4 cup minced onion
3/4 cup minced carrot
4 Tablespoons flour
1 quart chicken stock
3 cups grated cheddar cheese
Salt & pepper to taste
3 Tablespoons minced marigold petals
1 cup milk
1 cup cream
2 Tablespoons sherry
Chopped chives or parsley for garnish
Instructions:
Melt butter and sauté' celery, green pepper, onions, and carrot for about 12 minute. Add flour, stirring constantly till smooth. Now slowly add the chicken stock. Continue stirring till slightly thickened. Lower the heat and slowly add the grated cheese. Add salt, pepper, marigold petals, milk, cream and sherry. Heat, but do not boil. Garnish with chives or parsley.
