MEXICAN CHEESE ENCHILADAS SOUP
1/2 lb hamburger 1 cup onion, chopped 1 clove minced garlic 2 tsp cilantro, chopped 15 oz can kidney beans 10 oz can enchilada sauce 15 oz can tomato sauce 8 oz can tomato sauce 1 cup water 2 1/2 oz can sliced black olives 1 cup fresh chopped tomato 1/2 cup sour cream 4 corn tortillas, cut into 16ths 1/2 cups shredded cheese grated onion for garnish
Saute beef, onion, and garlic. Add cilantro, beans, sauces, water, and olives. Heat through. Blend in tomatoes, sour cream, and tortillas. Garnish with cheese and onions.
