Pavlova
3 large egg whites 1 cup sugar 1 tsp vanilla 2 tsps white vinegar 3 T cornstarch
Beat egg whites until stiff and add 3 tablespoons COLD water. Beat again. Add sugar very gradually while beating. While still beating slowly, add vanilla, vinegar and cornstarch. On parchment-covered cookie sheet, draw 9-inch circle and mound mixture within circle. Bake at 300 degrees for 45 minutes. LEAVE in oven to cool.
To serve, peel paper from bottom while sliding pavlova onto serving plate. Cover with whipped cream and top with an assortment of fresh fruit such as kiwi, strawberries, blueberries, etc.
