BAKED EGGPLANT ROUNDS
 
Take 1 lg. Eggplant, peel it and cut it into 1/4" rounds
Chop 1/2 c. each green, red, & yellow Bell Pepper (1 1/2 c. total)
Chop 1/2 c. purple or red Onion
Chop 3 Garlic cloves
Use 4 slices Pepper Jack Cheese
Tony's seasoning
Olive Oil
 
Preheat oven to 300 degrees Farenheit.  Grease baking sheet with
Olive Oil, layout Eggplant rounds and brush tops with Olive Oil.
Sprinkle Tony's seasoning on top.  Put in oven for 15-20 mins.  Mix
chopped green, red, yellow Bell Pepper, Onion, and Garlic in bowl.
Take out Eggplant rounds and turn over rounds.  Place Bell Pepper,
Onion, and Garlic on top of backside of rounds.  Top with strips of
Pepper Jack Cheese.  Place back in oven until cheese melts -
approximately 10 mins.  Remove from oven and serve warm.
