this is a pretty good budget stretcher; i know my mom used it frequently when i was growing up... (only then you couldn't purchase cheese already shredded for you!)
 
1 bag shredded cheese (I use the mexican blend)
1/2 onion (my mom used white, i use red, it's your preference)
1 can black olives
1 bag of rolls (about 10 to a bag)
 
preheat oven to 400 degrees
 
toss 1/2 onion into food processor pulse until diced finely
empty onion into large bowl
toss olives into food processor and pulse until diced finely (I don't even clean it out after the onion is diced)
empty olives into same large bowl
add bag of shredded cheese
 
combine
 
take rolls and cut off just the very tops
scoop out the insides as if making a mini soup "bread bowl"
stuff cheese mixture into roll (when it melts it will "reduce" a bit)
top with top of roll
wrap in foil
 
put in 400 degree over for approximately 20-30 minutes. If refrigerated, it may take longer. These are also good to freeze for future use.
