Southwest Breakfast Skillet

Ingredients:

Non stick cooking spray
2 cups small red potatoes, cubed
1/4 cup Mrs. Dash® Mesquite Grille 10-Minute Marinade
1 cuponion, chopped
1 cup green peppers diced
1 cup cooked turkey, cubed
1 cup low fat egg ? substitute
1/2 cup low fat grated cheddar cheese

Directions:

Spray an 8 inch (20cm) oven proof skillet with non stick cooking spray.
Spray potatoes with cooking spray until well coated, place them in preheated skillet and cook, turning often, until lightly browned and soft.
Add Mrs. Dash® Mesquite Grille 10-Minute Marinade, onion, and green peppers to potatoes with 2 Tbsp. (30mL) water. Continue to cook until vegetables are crisp-tender. Add cooked turkey and remove from heat.
Whisk egg substitute until foamy about 2 minutes.
Pour eggs over skillet mixture, top with cheddar cheese.

Bake, uncovered for 30 minutes in a preheated 350° F (177°C) oven. Serve immediately
