Crockpot Brunch Casserole
INGREDIENTS:
1 pound very lean ground beef
1/2 pound ground breakfast sausage, mild
1 onion, chopped
2 tablespoons butter
2 cloves garlic, minced
1 can sliced mushrooms
1 teaspoon salt, or to taste
1/2 teaspoon nutmeg
1 package (10oz) frozen spinach, thawed and squeezed to remove as much water as possible
3 tablespoons flour
6 eggs, beaten
3/4 cup milk, scalded
1/2 cup shredded cheddar cheese
PREPARATION:
In a skillet, lightly brown meats and onion in butter; drain well and place meat mixture in a well-greased slow cooker. Add minced garlic, sliced mushrooms, salt, nutmeg, spinach, and flour; stir gently to blend. Beat eggs and milk together; pour over meat mixture. Stir well; cover and cook on LOW for 7 to 9 hours, or until set. Sprinkle with shredded cheese 5 minutes before serving. Serves 6.
